Filet Mignon is one of my favorite cuts of steak to cook. The tenderness is so very nice, and cooked over really high heat, the outside develops a flavorful crust that provides a great contrast in textures.
As Filet Mignon, has a mild flavor (relative to other steaks), I often love to so do simple sauces, like that Rosemary Butter. I'll show you how to cook the filet off in the pan, an then for the last minute or so, add some butter and fresh rosemary, that give the steak a great favor, and provide a little sauce in the form or a drizzle right over the cooked steak.
It's a favorite of mine.
