I love Pepper Steak. There's no reason to be intimidated by either steak or French terms like Au Poivre. I saw a version made on Good Eats years ago, and it was clear, I could do that too. In this recipe, I pan roast a couple steaks, and then make a delicious peppercorn cream sauce. The techniques are not too complicated, and the whole dish can be cooked in about 20 minutes start to finish. I generally use a filet mignon or New York strip steak, but you can use other cuts as well. The pepper, cream and brandy combine to make a great and classic French sauce.
