Some dishes are all about the pure pleasures of cooking, and the preparing of this lovely mushroom mattar (green peas) masala is all joy and delight. The dish is almost ubiquitous on the menu of most north Indian restaurants, but unlike the heavy creamy fare that one might generally encounter, our recipe here rewards us with something light and soulfully delicious.
Proceedings commence with coconut oil in a hot pan, into which we add a generous splattering of cumin seeds, which as we know is good for digestion. Then add in turmeric, chili powder and cinnamon powder so we have a fragrant spice mix going.
Next comes what we can call the 'Holy Trinity' of North Indian cooking...thin sliced red onions, and a
good heaped tsp of minced ginger and garlic paste, yielding the most awesome of aromas from the pan. As these all warm up, toss in diced yellow bell peppers, which lends moisture and gets the cooking bustling. Then add tomatoes, a tsp of garam masala powder, water for gravy, and cover and warm up for around 5 minutes.
We now add the mushrooms (crimini, royal trumpet, any variety of choice). Make sure to mix them in really well, as we know the mushrooms will take on flavors very nicely. Add in a handful each of cilantro and mint leaves, then some coconut milk and water. Give this all a quick good stir and heat for 3 to 4 minutes, until the whole curry is bubbling away merrily, as if dancing for joy.
Now we add the mattar...fresh green peas, rich in vitamin C, and bringing in a lovely color contrast. Add some more mint leaves, and then saffron (presoaked in hot water). Saffron, with its amazing rich flavor, is a royal spice, potently good for the blood and for circulation.
Then add in a bit of black pepper and cardamom, and finally salt to taste. Cover and cook for a couple of minutes, and we are done.
Drizzle a little truffle oil over, and serve up with a little cilantro on the side.
