If you were looking for the easy route to a great lunch salad, this protein rich bean salad is a winner. Quick and simple to put together, it can serve for a lunch salad, and equally so, be a noteworthy item at a dinner party.
The dressing uses a base of Bombay flavored Bitchin' sauce, an eclectic composition of some remarkably nutritious ingredients. Layer on extra garlic, extra virgin olive oil, a generous dose of black pepper, salt to taste and lemon juice, and whisk it all in for a creamy dressing.
The salad itself uses a bed of spinach and watercress, to which is added pre-cooked black quinoa, shredded carrots, cooked garbanzo beans and a couple of servings of edamame. Toss the mix lightly, throwing in some pineapple balsamic vinegar for hints of sweetness and acidic flavor. Plate with cut avocado for a side, pouring the dressing over, with finishing touches of more black pepper.
This protein bean salad, fabulously easy to prep, is equally fabulous flavor-wise. The high protein quotient makes it a superb post-workout recovery salad as well.
