Recipe:
INGREDIENTS:
3/4 Cup mashed eggplant
1/2 cup chopped onions
1/4 cup cubed or chopped tomatoes
4-5 cloves garlic - (2 for stuffing) & 2-3 minced for paste
3 Fresh Green or red chilies - 2 for stuffing & 1 for gravy (optional)
1" Ginger grated
1 teaspoon cumin seeds
1/4 teaspoon Cumin powder
1/4 teaspoon garam masala powder (optional)
1/4 teaspoon turmeric powder
2 tablespoon oil
Salt to taste
PREPARATION:
1. Make 3 slits in eggplant. Stuff green chilies & garlic cloves in slits ( Optional). Fire roast on the grill turning and flipping carefully with tongs until done.When eggplant is done peel & mash.
2. Heat oil in a skillet, add cumin seeds. As soon as cumin seeds splutters, add chopped onions, minced ginger, garlic & stir fry. Add turmeric, cumin powder & garam masala.
3. When it turns golden brown, add red or green chili, salt & minced tomatoes.
4. Add mashed eggplant to gravy. Mix well stir fry till it becomes one lump. Enjoy!
