Dimer jhol/ Egg curry in Bengali style is a very yummy egg curry which you must try once.
Ingredients:-
1. Boiled egg - 4
2. Boiled potatoes - 2
3. Mustard oil as required
4. Cardamom 2, Cinnamon sticks 2, cloves 5, bay leaves 4, cumin seeds 1/2 teaspoon, dry red chillies 2
5. Onion slices - 1 bowl
6. Onion paste - 3/4 bowl
7. Ginger - garlic paste - 2 teaspoon
8. Green chilli paste - 2 teaspoon
9. Salt as per taste
10. Sugar - 1/4 teaspoon or as per taste
11. Turmeric powder - 1 teaspoon
12. Cumin paste - 3 teaspoon
13. Coriander paste - 3 teaspoon
14. Chopped tomatoes - 1
15. Hot water as required
16. Garam masala paste - 1 teaspoon or garam masala powder - 1 teaspoon
Method:- Boil egg, peel then slit with a steel spatula as shown in the video so that the gravy enters inside the eggs. Fry the boiled potato cubes with salt and turmeric powder. Fry the boiled eggs with salt and turmeric powder. Heat mustard oil add cardamom, cinnamon, cloves, bay leaves, cumin seeds, dry red chillies and stir. When it releases aroma add sliced onion and little bit salt fry till golden. Add onion paste and fry till light brown. Add ginger-garlic paste, green chilli paste, salt, sugar, turmeric powder and fry till oil separates. Add cumin paste, coriander paste and fry. Add little water if it sticks to the bottom and fry again till oil separates. Add chopped tomatoes and cook till oil separates. Add fried potatoes and fried eggs mix well. Stir for few minutes. Add hot water. When it comes to a boil lower heat and cover for five minutes. Add garam masala paste mix switch off the gas and cover for one minute so that the aroma of garam masala doesn't go away.
