A traditional dipping sauce made up of herbs and spices is delicious with grilled beef.
INGREDIENTS FOR THE SAUCE:
8 cloves roasted garlic
2 tablespoons chopped scallion
5 red chilies( more of less)
2 tablespoon lemongrass ( minced and pounded)
1 tablespoon galangal (roasted)
1 cup herbs( sweet basil, Che Ronar, mints ect.)
1 tablespoon roasted onion or shallot
1/4 cup of crispy Asian eggplant (Trob)
1/4 cup water
2-3 tablespoons fish paste (Prahok)
3-4 tablespoons sugar
4-5 tablespoons lime juice
1 kaffir lime leaf (optional)
Note: You may use less of the herbs and spices if they are not available in your area.
