Our first attempt to feed the Shirefolk. As you can tell, once they were fed, all kinds of shananigans exploded. The evening ended with water being thrown onto Laura, one of the cooks, who threatened to never cook for the Shirefolk again, hence Eric's crazed reaction at the end of the video. Anyway, the recipe is below: Chicken Enchiladas - Tom's Fave Ingredients: 2 cans of chicken breast - drained 1 large onion - coarsely chopped 1 bag of baby spinach 1 large red bell pepper - coarsely chopped 2 tbsp. olive oil 1 cup (8oz) reduced fat sour cream 2 cans diced green chilis - drained 4 cups (2 bags) shredded part skim mozzarella cheese 4-6 whole grain tortillas 1/2 tbsp. cumin 1 1/2 tsp chopped garlic Cooking directions: 1. Saute onion, garlic, and bell pepper in oil until limp. 2. Add full bag of spinach to pan - cover and remove from heat - steaming spinach until limp - approx. 15 min. 3. Add drained chilis, sour cream, chicken, and cumin, mix well. 4. Line large greased casserole dish w/ tortillas - then spread 1/2 chicken mixture over tortillas and top with 2 cups cheese. Repeat tortilla, chicken, cheese. 5. Bake 30-45 minutes @ 350 F until cheese is beginning to bubble and brown. ENJOY! Recipe courtesy of the fabulous Momma G.
