[ 本次甜點介紹 ][ About this recipe ] 大家好,歡迎來到我的甜點創作頻道。 這次我做的甜點是一個抹茶塔。 這個抹茶塔的基本組成元素包括了抹茶口味塔皮、抹茶杏仁奶油餡、以及抹茶卡士達慕斯。 此外我做了三種不同的抹茶小點心裝飾在這個塔的表面。 由於三種小點心的樣式、顏色與口感各不相同,它們增加了這個塔在視覺上與口感上的豐富性。 在製作抹茶塔皮與抹茶杏仁奶油餡時我使用了一個方法,能夠帶出濃郁的抹茶風味,那就是將抹茶粉溶於含有大量水分的蛋白中,藉由蛋白的水分使抹茶粉的成分大量溶出。 如果不這樣做,抹茶味可能會不夠,使整個塔只有甜味而變得較為膩口;或者必須加入更多抹茶粉來補強抹茶風味,但這樣可能會導致粉粉的口感,口感不佳。 最後的成品是一個抹茶風味濃厚,且能同時品嘗到多種不同抹茶點心的風味與口感的塔。 Hello everyone. Welcome to my dessert making channel. In this video I made a matcha tea tart. The basic elements of this matcha tea tart are the matcha-tea tart crust, the matcha-tea-flavored almond cream filling, and the matcha-tea custard mousse. Besides, I made three kinds of matcha-tea snacks and used them to decorate the surface of the tart. The different appearances, colors, and textures of the three kinds of matcha-tea snacks make this tart rich in both its look and its taste. When making matcha-tea desserts, an important thing is that the matcha-tea flavor has to be strong enough. Otherwise, the tart will be unplesantly sweet. The point is to let the bitterness of matcha tea and the background sweetness of the dessert balance out each other. However, if you add too much matcha tea powder, the texture of the dessert is going to be powdery. To make the matcha-tea flavor in this tart really strong without the texture becoming powdery, when I was making the matcha-tea crust and the matcha-tea-flavored almond cream filling, I immersed the matcha tea powder in the egg white to let the water in the egg white dissolve out all the substances in the matcha tea powder that contribute to matcha flavor. This tart is rich in its matcha-tea flavor, and you can taste a variety of textures and flavors at one time. Hope you enjoy this recipe.
