We have a DELICIOUS recipe for you today. These Sweet Potato Egg cups are fantastic. Packed with protein and healthy carbs, these are a great brunch staple.
Here's the recipe:
Sweet Potato Egg Cups!
Ingredients:
-4 medium sweet potatoes
-1/2 teaspoon of pink Himalayan sea salt
-1/2 teaspoon of garlic salt
-Pepper to taste
-Sprinkle of cheese
Directions:
-Preheat oven to 400 degrees
-Peel sweet potatoes, then slice into 1/2 inch thick discs
-Place sweet potatoes on a foil-lined baking sheet and bake at 400 degrees for 20 minutes
-After sweet potatoes are fully baked, scoop into a bowl and mash
-Add in spices and cheese and mix
-Scoop a tablespoon of sweet potato mixture into individual muffin tins
-Crack one egg into each muffin tin
-Bake for 12-15 minutes (bake for 12-minutes if you like the egg more running)
-Enjoy!
