Short Ribs in my Power Pressure Cooker XL (6 quart)
Serves 4
Chicken/Meat Button
Quick Release
• 8 short ribs, trimmed
• 2 cups beef stock
• 1 medium onion
• 2 stalks celery, diced
• 3 garlic cloves, peeled, minced
• 1 bay leaf
• 8 small red potatoes
• 2 tbsp olive oil
• 1 tbsp sea salt
• 1 tbsp fresh ground black pepper
• 1 sprig each of thyme and rosemary
Season ribs with salt and pepper. Press Sauté. Pour olive oil into pot.
Press Chicken/Meat button. Brown ribs.
Remove ribs, set aside. Add veggies and garlic. Sauté 4 minutes. Add paste.
Place ribs back in pot with other ingredients.
Secure lid. Press cancel. Press Soup/Stew. Time adjust to 40 minutes. Quick release
