I use local, organic ingredients from the island of Maui for this particular rendition.
My Portuguese grandma's version of this recipe and the one my mama made for us included fish heads. This was based on my family's rich tradition of using every part of the carcass to honor the life of the animal, and for the rich flavor, it added to the soup stock.
I don't use fish heads in this version, because honestly, having the fish eyes look at me from my bowl always scared me. I do show you how to make homemade fish stock using a fresh fish carcass and options if that's not available for your version of this recipe.

I love combining Portuguese food with Mexican flavor whenever possible. With this Portuguese fish stew recipe, I used hot chilies and a combination of spices to blend these two culinary experiences into a whole new level of yumminess!
The Hawaiian fish I use is fresh, caught that same morning. Shrimp can also be used for the stock. Vegetables include local Hawaiian purple potatoes and various other organic delights grown on the island!
