Keto French Toast Chaffle (Makes 4)
2 eggs
2 oz. cream cheese
1 Tbsp sugar free maple syrup (you can also use Maple Extract, I'd start with one teaspoon, and you can add more to your liking)
1 tsp vanilla
1 Tbsp eryrithritol
1/2 Tbsp cinnamon
2 tsp coconut flour
1/4 tsp baking powder
Microwave cream cheese on high for about 20 seconds (timing can vary based on your microwave), you want it at a texture similar to frosting. Make sure it has cooled off before adding both eggs, and then add the rest of the wet ingredients, and mix it up with a whisk, a fork, or a spatula.
Add in the dry ingredients and mix it up again.
Pour into the mini waffle maker slowly just until you see that the waffle iron is covered completely. Close the lid and cook for 3-5 minutes.
I usually get four chaffles out of this recipe.
Macros (approximate) per chaffle: Calories - 51 | Fat - 2.7 | Net Carbs - 1.7 | Protein - 3.2
Keto Ham (or anything really) & Cheese Omelet Chaffle (Makes 3)
2 Eggs
1/4c Sharp Cheddar Cheese (or any other cheese you want)
1 TBSP Heavy Whipping Cream
Salt to taste
Pepper to taste
1/4c (Diced ham, veggies or other proteins) Make it your own but add it after you've poured the egg in to prevent overflow.
Pour into the mini waffle maker slowly just until you see that the waffle iron is almost covered completely then add 1/3 of the Ham/Veggie mixture.
Close the lid and cook for 3-5 minutes.
Let cool for about 1 min, and then enjoy!
Keto McChaffle Recipe (Makes 2)
1 egg
1/2c Mozzarella Cheese
1-2 TBSP Lakanto Sryup or equivalent (Link above)
Pour into the mini waffle maker slowly just until you see that the waffle iron is covered completely. Close the lid and cook for 3-5 minutes.
Makes 2 for a perfect sandwich top with Bacon, Sausage, Ham or veggies along with a friend Egg for the perfect breakfast sandwich.
