This is how to shape gnocchi, an Italian style potato dumpling, using a gnocchi roller board. The trick to gnocchi is to treat them delicately and not squeeze them flat. Press just enough to start the curl and let it wrap around your thumb as you move it down the board. You could also use the back of a fork like my grandparents did. No kitchen tool was single purpose!
