Tomato stew is commonly eaten across Nigeria, it is a staple Sunday meal served in most homes in the nation.
Its always a love hate feeling depending on the porosity of the tomato and the sweetness influenced by the herbs, spices and meat used to make the sauce.
***NOTE***
I noticed some editing error in the section of the meat, please do ignore and read further in this description box for more information. I would divide the recipe in two part for the stew and for the meat.
INGREDIENTS:
FOR THE STEW
8 large tomatoes
3 large onions
4 bell peppers (tartashe)
4 scotch bonnet
1\2 tsp garlic
1\2 tsp ginger
1 tsp thyme
1 tsp curry
40g tomato puree (optional)
2 bullion cubes
Meat stock ( Stock powder can be used also)
1/2 cup Vegetable oil
2 Stock cubes (optional)
FOR THE MEAT
400g beef
500g chicken
3 scotch bonnet (chopped)
1 tbsp garlic
1 tbsp ginger
1 tbsp thyme
1 tbsp curry
2 bullion cubes
1 tsp Salt
1/2 medium onions (chopped)
***NOTE***
Always taste the stew before adding salt or bullion cubes so as to not add excess. This is because taste buds varies.
STEPS FOR MEAT
In a pot, add the beef, chopped onions, ginger, garlic, thyme, curry, scotch bonnet (Hot pepper).
Stir and steam for 5 mins on medium heat.
Add 1.5 cups of water, diced chicken, 1/2 tsp of salt and stir
Cook for 10 mins on medium heat
Drain the water from the meat (this would be used in making the stew)
Transfer the meat to a baking pan a grill or bake until brown( the meat can also be fried as well)
Set aside to be used for the stew.
STEPS FOR THE STEW
Blend tomatoes, pepper, onions, scotch bonnet to a smooth paste.
Add 1/2 cup of oil to the pot and heat for 5 mins and pour the blended mix in to the pot.
Cook for 30 - 45 mins on medium heat.
Add the tomato puree, and cook for another 10 - 15 mins (or until the oil start to surface and the water content has dried).
Add the seasonings (thyme, curry, ginger, garlic, bullion cubes, stock cubes) and the meat stock
Cook for 10 - 15 mins on medium low heat (this is to infuse the ingredients together and to further ensure the tomatoes has no sour taste).
Add the grilled/fried meat to the stew and cook for 10 mins on medium low heat.
Serve with any side of your choice.
