Here's how I make blackberry muffins. Blackberry Muffins 2 cups all purpose flour (I use White Lily) 3/4 cups sugar 1/2 tsp. baking soda 3 tsp. baking powder 1/4 tsp. salt 1 tsp cinnamon 1 egg 1/4 cup melted butter 1 tsp. vanilla 1 cup sour cream 2 cups of blackberries (frozen or fresh) Mix together flour, sugar, baking soda, baking powder, salt and cinnamon. Add egg, melted butter, vanilla and sour cream. Mix well. Batter will be very thick. Add 2 cups of blackberries. Mix well then fill muffin cups about 2/3 full. Bake at 375 for 15-20 minutes or until lightly browned. Longer baking time may be necessary if frozen berries are used. Makes about 2 dozen.
