What a delicious and oh, so easy, recipe for super muffins! Make a bunch and freeze them for future tasty treats. Recipe: 2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon salt 3/4 cup granulated sugar 2/3 cup orange juice 1-2 tablespoons defrosted orange juice concentrate 1/2 cup oil 2 eggs 1/4 cup sour cream Preheat oven to 350 degrees. Grease a muffin tin (or you can use liners if you prefer) Combine flour, baking powder, baking soda, salt, white sugar. Add orange peel and combine with flour mixture until orange peel is well mixed in. Stir in orange juice, orange juice concentrate, eggs, oil and sour cream. Bake for 20 minutes until the toothpick test shows a clean result! Cool in pan for five minutes. Remove muffins from tin and cool on rack. Eat warm with lots of butter!
