Ingredients:
Chinese Eggplants
Shrimp
Vegetable Oil
Green Onion
Fried Garlic
Salt
Garlic Powder
Paprika
Black Pepper
Or any other seasoning you'd like!
Sauce:
Oyster Sauce
Mirin Sauce
Cornstarch
Water
As with Hmong cooking, sometimes you have to guess and eye everything. So I'm sorry, if I didn't provide exact measurements. It goes the same with temperatures. I use gas so it heats pretty well, so it takes some guessing at times.
I start the pan on high heat, but once I flip the eggplants once, I'll lower it to medium heat until the oil in the pan has been soaked up by the eggplant. Then I'll carefully place the water into the pan.
For the sauce, it was an estimated guess. I did equal amounts of oyster sauce and mirin sauce, while more water was used. The cornstarch should be between a spoon or two.
