I love how some of my experimental recipes become a family favorite. Halloumi cheese is an amzing cheese that reminds me of paneer or cottage cheese except for its saltiness. I also came to know that it originates from Cyprus and spread throughout the Arab world. Adding my Indian kick to something so unique helps me feel good about cooking.
