My name is Jovelyn and today i made Filipino dish called ginataang monggo or mungbeans with coconut milk!
Ginataang MOnggo Recipe:
1/2 cup monggo
1 can (400ml) coconut milk
1lb shrimps
2 Tbsp fish sauce
1 tsp salt
8 cups water
2 cloves garlic,crushed
1 small eggplant, cut up into cubes like
2 cups fresh spinach
How to:
Wash the beans and put it in the pot with 5 cups water and bring to boil for 2-3 minutes after a big boil. Remove from heat, cover and set aside for an hour.
Wash and rinse the beans and cover with brand new water like 3 cups and boil for 45minutes until soft.
Add tomato, garlic, and eggplant, cook until the latter get soft.
Season with salt, fish sauce, then add the shrimp and coconut milk. Cook 2-3 minutes or shrimp color turns into orangy. Add spinach, mix and turn off heat. Its ready to serve!
Best to eat it over rice! Enjoy!

Mungbeans/Monggo – is a type of small green legumes in the same plant family as peas and lentils- is a high source of protein, fiber, antioxidant and phytonutrients.

. very filling food, high in protein, resistant starch and dietary fiber.
. you can find mungbeans in dried powder form, as whole uncooked beans, “split-peeled” form, as bean noodles, and also as sprouted seeds.
. because mungbeans have high nutrient density it is considered useful in defending against several chronic age related deseases including heart disease, cancer, diabetes and obesity.
