Eggplants with Rice Risotto Maqluba مقلوبة باذنجان سهلة
1 lb eggplants. Cut into thin slices.
2 cups basmati rice
4 cups water
Salt and pepper
1 tablespoon chicken base
4-5 tablespoons Olive oil
200 g ground meat
Pine nuts and almonds for decoration.
Fry or bake eggplants with olive oil.
Cook meat in a saucepan. Add salt and pepper.
Wash rice with water several times and drain.
In a pot , place one cup rice to form a layer. Place meat and eggplants on rice. Form another layer with the other cup rice then eggplants and meat.
Pour water on rice after adding chicken base salt and pepper to taste.
Add 2 tablespoons olive oil.
Cover. Cook on low heat for 45 minutes.
Turn off heat and keep covered for another 10 minutes.
Decorate with fried almonds and pine nuts.
You can eat with plain yogurt or salad.
