Serves – 4

Ingredients:
Bonesless and skinless Chicken thigh pieces – 750 grams
Onion – 1 (finely chopped)
Tomato – 1 (finely chopped)
Salt – 1 tbsp
Ginger and garlic paste – 1 tbsp
Green chilies – 6
Curry leaves – 10
Ghee or coconut oil – 2 tbsp
Coriander powder – 1 tbsp
Chili powder – ½ tbsp
Turmeric – ¼ tbsp
Coconut milk – 400 ml
Cilantro to garnish
Cardamom – 2
Cloves – 3
Cinnamon stick – small piece
Bay leaves – 1
Fennel seeds – ¼ tbsp.
Cumin – ¼ tbsp.
Instructions:
1. Heat Ghee in a deep bottom pan.
2. Add cardamom, cinnamon, cloves, bay leaves, fennel seeds and cumin seeds and wait for 30 seconds.
3. Add curry leaves and green chilies and sauté for 30 seconds.
4. Add onion and fry until it becomes slightly golden brown in colour
5. Add ginger and garlic paste. Sauté for another 30 seconds
6. Add chopped tomato and cook for about 4 to 5 minutes
7. Add coriander powder, chili powder, turmeric powder and mix well for a minute.
8. Add chicken pieces and add salt. Mix everything well and cook for 7 to 8 minutes.
9. Add coconut milk and bring it to a boil in medium heat.
10. Cover the pan with a lid and cook for 10 – 15 minutes.
11. Open the lid and give it a slight mix and cook for 5 to 10 minutes or until the gravy thickens.
12. Garnish with cilantro.
Service with keto naan or cauliflower rice. If you are not on Keto, enjoy the yummy and flavorful curry with roti or rice.
