First, we're going to make homemade ground chicken. This whole promise of juicy meatballs is based on this single step. If you don't have a meat grinder, your food processor will do the work too.

This healthier version of Chicken Parmesan is great for quick weeknight dinner. It freezes well, so you can make it in batches.

CHICKEN PARMESAN MEATBALL RECIPE
Ingredients:
For meatballs:
1 pound ground chicken thighs
1/2 cup almond meal
1/2 cup grated Parmesan cheese
1 tbsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp parsley leaves, chopped
1/2 tsp salt
1/4 tsp black pepper
1 egg
2 tbsp olive oil
For easy marinara sauce:
1 28 oz can peeled tomatoes (or crushed tomatoes)
1/4 cup olive oil
3 cloves garlic, thinly sliced
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1 cup grated mozzarella cheese
Preparation:
In a bowl, combine seasonings first, almonds, Parmesan cheese, Italian seasoning, garlic powder, onion powder, parsley, salt, black pepper and egg.
Then you can add ground chicken and olive oil. Gently mix with the tip of your fingers, do not over-mix it.
Spoon about 2 tablespoons of mixture and form the meatballs using your hands.
Place the meatballs on a lined baking sheet and bake for 15 minutes at 400 degrees, or when meat thermometer in the center of meatball reaches 165 degrees.
Meanwhile, make the marinara sauce.
In a skillet, heat the olive oil over medium heat. Add the garlic and cook stirring for 1 minute.
Add the tomatoes, dried oregano, dried basil, salt and black pepper, and gently simmer for 15 minutes.
Place the meatballs into the marinara, sprinkle with grated mozzarella cheese and bake for 5 minutes, or until the cheese is nicely melted.
Serve with low carb mashed cauliflower, green salad or grilled zucchini.
