"Ghugni is one of the most beloved of Bengali dish. It is a dish of curried whole-yellow peas or matar dal. A very similar dish is also known as Chotpoti in Bangladesh. A good ghugni is one in which the motor dal is well-cooked, but remains whole. The key is to not overboil the dal. it s a very delicious dish." "Hello friends, Welcome to the "countrywoods kitchen. INGREDIENTS: Whole Yellow Peas -500g Mustard oil-3-4tbsp Green chilli -2-3 Tomato -1(large) Garlic- 4-5 Ginger -1.5inc Bay leaf -2pcs Cinnamon stick -1-2 Cloves- 2-3 Cardamom -1-2 Onion - 2 Potato -1 Cashew nuts- 5-6 Turmeric powder- 1tbsp Red chilli powder- 1tbsp Cumin powder- 1tbsp Coriander powder- 1tsp Dried Red chilli- 3-4 Raisins- 7-8 Cumin seeds- 1tsp Ghee- 1tbsp Garam masala- 1tbsp Sugar - 1tsp METHOD :- 1. Rinse and soak the dal in water overnight (at least 10-12 hours). Drain it from the water and transfer it to a saucepan. 2 .Add water . Cover and boil the dal on low heat. The dal should be soft but remain unbroken. So be sure to keep an eye on it so that it doesn’t disintegrate. Once done, strain the dal and reserve the water for later. 3. Make a paste of tomato,green chillies, garlic,ginger ,big sliced onion, cinnamon & cardamom. 4. Set a pan on medium heat and add mustard oil & ghee. Once hot, add cumin seeds, bayleaves, dried red chillis, cinnamon & cloves.  5. Once the whole spices are crackling, add the onions and fry them until brown. 6. During this time, make a paste of turmeric powder, coriander powder, cumin powder, kashmiri red chilli powder, and little bit water. Mix them & Add it to the pan. Add the onion-tomato paste also. mix them well & cook them in a low flame for 1-2 minutes. 7. Add potatoes & cover it with a lid & cook them for 3-4 minutes. 8. Once the spices have started releasing their oils, add the boiled matar dal to the pan. Fold it with the spices and cook for 4-5 minutes before add the reserved water. Add salt, sugar, cashew nuts, raisins and turn up the heat. 9. After 4-5 minutes add reserved water & cover it with a lid. cook for 8-10 minutes in low to medium heat. add some water on it to get the watery consistancy. 10. Add some garam masala & a Tbsp of ghee. cover it for 5-10 minutes before serving. 11.
