RECIPE 2 cups gluten-free oat flour 3/4 cup organic sugar 1/2 cup white rice flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 cup non-dairy milk 1/4 cup light olive oil (or other neutral oil) 1/4 cup lemon juice 1 tsp. vanilla extract 1 tsp. lemon extract Yellow food coloring (optional) Frosting: 3 cups organic powdered sugar 1/4 cup vegan margarine 1 Tbsp. lemon juice 1 Tbsp. non-dairy milk 1/2 tsp. vanilla extract 1/4 tsp. lemon extract Yellow food coloring (optional) Lemon slices for decoration Preheat the oven to 350 degrees Fahrenheit. To a bowl, add oat flour, sugar, rice flour, baking powder, baking soda, and salt. Stir well. Add non-dairy milk, oil, lemon juice, vanilla extract, lemon extract, and yellow food coloring. Stir well. Scoop batter into a cupcake pan, lined with greased cupcake liners. Bake 20-24 minutes. Let cool completely. To make the frosting: to a bowl, add powdered sugar, vegan margarine, lemon juice, non-dairy milk, vanilla extract, lemon extract, and yellow food coloring. Use a hand-mixer to mix until a smooth frosting forms. Frost the cooled cupcakes, and top each one with a lemon slice. Makes one dozen cupcakes.
