A spicy mayo dip made of mayonnaise and Schezuan sauce multiples the appeal of the Zucchini Fritters so much that it will test to will power to stop feasting on this snack! You can also try Herbed Maggi Fritters or Spicy Paneer Fritters. Preparation Time: 5 minutes. Cooking Time: 9 minutes. Serves 4. 2 cups zucchini strips Oil for deep-frying Chaat masala for sprinkling For the batter 1 cup self rising flour 2 tbsp cornflour Salt to taste 1½ tsp dry red chilli flakes 1 tsp dried oregano 1 tsp chilli sauce 2 tsp tomato ketchup To be mixed together into a spicy mayo dip ½ cup mayonnaise 1 tsp Schezuan sauce For the batter Combine all the ingredients along with 1¼ cups of water in a deep bowl and mix well using a whisk to make a thick batter. How to proceed 1. Heat the oil in a deep non-stick kadhai, dip the zucchini strips, a few at a time, in the prepared batter and deep-fry in hot oil till they turn golden brown in colour from all the sides. Drain on an absorbent paper. 2. Sprinkle a little chaat masala on top and serve immediately with spicy mayo dip.
