I'm sharing the actual meals I made from last week's meal plan!! What's for Dinner last week you ask?! Here is our menu this week for easy weeknight meals:

Strawberry Rhubarb Sauce:
1/3 cup sugar
pinch of salt
1 tablespoon cornstarch
1/8 cup water
1/2 tablespoon lemon juice (**optional, of don't have..sometimes I use, sometimes not)
2 cups frozen strawberries & rhubarb
In a small saucepan, mix together sugar, salt, cornstarch, water and lemon juice. Stir until dissolved. Add fruit
Bring to medium boil, stirring occasionally, for about 2-3 minutes (until berries are soft). Then I usually turn down to very light boil, or even
simmer, for few minutes to get a little thicker.
I then turn burner off and it continues to thicken on its own. Can serve cooled down, or can lightly warm up again.
Spicy Potato Tacos:
Spicy Ranch: Bottle Ranch mixed with Sriracha (more sriracha for more heat!)
Potatoes:
roughly 7-10 russet potatoes washed and diced
add to potatoes (estimates - I don’t measure)
4 tbsp EVOO
3 tbsp paprika
3 tbsp chili powder
1 tbsp season salt
2 tsp onion powder
2 tsp garlic powder
Mix and bake at 350 for about 60 minutes or until potatoes are tender (depends on the size of the chopped pieces)... stir/flip halfway through.
Serve on corn or flour tortilla with toppings of choice.

Stuffing (bag mix, per instructions)
Tabouli:
Cook 1 cup quinoa - cool
Clean & Dice all of the following: 1 cucumber, 1 roma tomato, 2 bunches of parsley (w/o stem), 1 bunch mint (w/o stem). Mix all diced ingredients. Grind Sea Salt & Black pepper to taste. Juice 1 lemon over all. Drizzle with EVOO. Mix in gently cooled quinoa. Serve cold (best if refrigerated 2 hours or more before serving!) We love alone, on chicken shawarmas or in a pita with hummus!
