This is a super easy chili recipe using beer to celebrate Octoberfest or really any occasion or just to cozy up on a cool or rainy day. Make this for your next game day or for your partner to show off how easily and yummy you can cook!
Ingredients:
1 lb lean ground beef, turkey, or chicken ( you may opt for a vegan substitute)
olive oil
1 lg green pepper chopped
2 carrots chopped
1 onion chopped
4 garlic cloves minced
salt and pepper to taste (i also added ground cumin)
1 tbs chili powder
2 tbs hot sause (your choice optional to add)
1 lg can 28 oz diced tomatoes
1 15 oz can red kidney beans or black beans (both if you wish)
1 12 oz dark beer (your choice brand)
In pot add 1/2 cup cold water and break the ground meat first then turn on heat to cook it thoroughly. Drain the water which helps drain out excess fat as well and season the meat with salt and pepper to taste. I also added cumin since i like the flavor it adds to it. Brown the meat a bit for a couple minutes then place in a small bowl to the side. In same pot add 1 tbs olive oil or enough to coat the bottom and add the chopped peppers, carrots, and onion. Saute these for about 6 to 8 minutes covered, stirring often. Covering will steam them and help to soften them some before you add the garlic ( do this at a low temp) add salt and pepper to taste. Add the garlic and saute for a couple minutes careful that garlic does not burn. Now you are ready to add the meat or vegan substitute you prepared as directed. Also add chili powder and the hot sauce, you may leave out the hot sauce if you cannot handle the heat. Add the whole can of diced tomatoes with it's liquid and drained beans. Now pour in whole bottle of beer into your mixture of yumminess. Cook this about 30 minutes or till it has reduced to about 1/2 beer, this allows for the alcohol to evaporate as well. You may decide you prefer to only cook it 20 minutes which is enough to allow all the flavors to marry into each other. Serve this hot with some corn bread, top it with sour cream or extra hot sauce. Enjoy!
