After I did The Great British Bake Off, I decided to go back to school because I think I realised that my passion was baking. Before, if anyone asked me what’s my favourite then I would say chocolate cake. But since we started school here, it changes because we’re always making something different. I still love cakes, but it’s changing… gradually. Every day is a challenge because we’re doing something different that challenges you and pushes you to do something that is, maybe at home, out of your comfort zone. For me, I’m a big guy, so I’m not good at all these tiny, tiny, little fancy things and coming here is great because I get to learn the processes and how to treat a flower (for example) with care and how to put a flower on there gently. It’s almost being gentle with things and learning the little, little things that actually could make something look so different – just that one tiny bit. My future career goal, for me, ideally for a retirement plan, will be to own my own bakery with my name above the door. Not necessarily a bakery, but a deli where you have cakes and you can have something to eat if you want to. That’s again one of the reasons why I came here, to have that training behind me to say that I’ve come to Culinary Arts Academy Switzerland, a well-respected institution, I’ve got my qualification and I’ve been trained by some of the best in the industry. I strongly believe that Culinary Arts Academy Switzerland is helping me towards my goal of having my name above the door. One of the modules is Business Plan, which is perfect because I get to learn all the stages of a business plan and how to set up the business properly for it to be successful. It’s perfect. …and, there’s a mountain there. You just walk out and you see a mountain. Of course I love it!
