SEITAN PAPRIKAS
Seitan:
1/2 cup vital wheat gluten
1 1/2 tbsp nutritional yeast
1 oz. water
dash tamari sauce
1/2 tsp vegetable stock
1 tsp oil
ground pepper
1/2 tsp dill
pinch tarragon
pinch caraway
2-3 drops liquid smoke
1/4 tsp marmite
Seitan broth:
2 cups water
dash tamari sauce
1/2 tsp vegetable stock
Sauce:
1 tbsp oil
1 tbsp paprika
1 tomato, chopped
1 bell pepper, chopped
1 chili, chopped
1 tsp basil
1 tsp salt
1/2 ground pepper
1 tomato, chopped
1 tsp paprika
Combine all ingredients for seitan and knead well until consistent.
Combine all ingredients for seitan broth in a pot and place seitan dough in the pot. Bring to a low boil for 45 minutes to 1 hour. Allow to cool for 15 minutes before slicing into bite-sized pieces. Set aside.
For the sauce, heat oil over low heat. Add in paprika and stir, being careful not to burn! Add in tomato, bell pepper, and chili. Toss to coat with oil. Add spices, remaining tomato and paprika, and stir to coat. Bring to simmer. Add in seitan and simmer for 5-10 minutes.
VEGAN SOUR CREAM
1/2 lemon
1 tsp oil
1 tsp maple syrup (or whatever sweetener)
1 block soft tofu
Mix liquid ingredients well before blending with tofu until smooth.
