As I mentioned in the video, this pancake is a Malaysian favorite pancake sold by street hawkers, night market and around Malaysia.
Its so cheap to buy so housewife find it not feasible to make it themselves but instead buy them. I hope you will enjoy making this pancake as much as I do. Its totally delicious.
Here are the ingredients needed and follow step by step:
Step 1. Make the yeast dough. You need
50gm flour
half a tsp dry yeast
half a tsp sugar
50ml warm water
mix as the usual way of making any yeast dough. Leave it aside
for 20 mins in warm place to let it rise. Now go to Step 2.
Step 2. Make the batter. You need
75gm sugar
about 100ml eggs (thats about 2 medium size eggs)
200gm cake flour or normal flour
50gm rice flour
25gm corn flour( or Speisestaerke)
2 tsp baking powder
400ml mineral water
1 tsp vanille powder (optional)
Mix all the ingredients to form batter, once its evenly incorporated
at the Step.No.1 YEAST DOUGH and continue to mix evenly into batter and let it rest for at least an hour. Then ready for frying.
(**I have left out 2tsp baking soda because I personally feel there are too much chemical so I use minerals water to boost it but you can add it if you want, your option)
Step 3. Meantime prepare the peanut sugar mixture. You will need
75gm roasted and grounded peanuts
2 tbsp roasted sesame seeds
4 tbsp sugar/brown sugar
mix all together and place aside.
Use a 24cm stainless steel frying pan so that your pancake can have a golden brown surface.
Heat the frying pan at medium heat, brush a little butter/margarine, then scope 2 soup ladle of the batter, distribute it well around the frying pan.
If you want a higher crispy crust for your pancake like our tradition way
then make sure the sides of the frying pan is also coated.
Once that is done, cover the pancake for about 2 minutes.
Once you see it bubbles and have a sort of lightly drying out surface sprinkle the peanut mixture and cover for a further half a minute. Check that you do not over burnt your pancake.
Remove from pan and fold the circle into half.
Serve as it is or dribble caramel or chocolate to your liking.
But the locals just eat it as it is.
