Overnight mashing, worked great, I only lost about 13 degrees of heat over 6 hours, I bet a "cooler style" mash-tun might work better than stainless steel. I also understand the enzymes responsible for starch conversion only stay active for about 2 hours so I don't know if the conversion was more effective with such a long timeframe, but I hope I maximized my efficiency while sleeping on the job so to speak.
