My own simplified/modified version of a Japanese dish: Omurice. Serves 2. Ingredients: 1 clove of garlic (1/2 tsp minced) 1/4 onion diced 4-5 white button mushrooms, de-stemmed and sliced 1/2 cup thawed peas 1 cup of canned diced tomatoes 1 TBSP ketchup 1 and 1/2 cup cooked white rice 4 eggs Cooking oil Salt and pepper Instructions: 1) After adding oil on high heat, turn heat down to medium/medium high and add garlic 2) Once garlic is aromatic, add onion and cook until yellow-ish 3) Add in mushrooms and cook until soft 4) Remove into separate bowl for later 5) Turn heat to medium high and add in canned tomatoes. Try not to get juices in the pan or have it drained beforehand. 6) Add in ketchup and then peas 7) Stir and cook for about a minute 8) Add in the previously cooked mushrooms/onion/garlic and cook together for another minute 9) Season to taste with salt and pepper 10) Add in rice and combine with the "sauce" 11) Scoop out into separate bowl. 12) Add more oil into pan and put heat on high 13) Add in half of the eggs (2 eggs) that are scrambled. 14) Create an omelet/circle with the eggs 15) Place half of the rice mixture into the center and fold over sides or place half of the rice mixture on one half of the circle and fold over the other half. 16) Remove onto plate and repeat the necessary steps to create the second serving of omurice. 17) Drizzle ketchup over the omurice. Voila! Keep in mind in no way am I trying to replicate the dish exactly, so if something is off to you, oops. Wanted to show an easy, modified version that still tastes good.
