Banana Crumb Bread Recipe
Ingredients:
For the banana bread
2 cups (240 g) all purpose flour
¾ cup (149 g) granulated sugar
1 teaspoon baking soda
½ teaspoon salt
3 bananas (if using already ripe bananas, skip steps 2-4)
2 large eggs
½ cup avocado oil
2 teaspoons vanilla extract
For the crumb topping
½ cup (60g) all purpose flour
⅓ cup (68g) brown sugar
½ teaspoon cinnamon
¼ teaspoon salt
¼ cup unsalted cold butter, cut into 4 pieces
Directions:
- Whisk the flour, sugar, baking soda and salt together in a large bowl.
- Place the bananas on a baking sheet.
- Bake them at 300 degrees F for 30 minutes.
- Peel away the skin and scoop the fresh into a medium bowl.
- Mash the bananas with a whisk.
- When the bananas are cool, stir in the oil, eggs and vanilla.
- Fold the banana mixture into the dry mixture with a rubber spatula.
- Pour into a greased 9 inch loaf.
- In a small bowl mix together, the flour, brown sugar, cinnamon, and salt.
- Drop the cold butter in and with your fingers knead -the butter into the flour mix until it starts to come together.
- Sprinkle on top of the banana bread.
- Bake at 325 degrees F for 60-70 minutes or until a toothpick comes out clean.
