Who doesn’t like a muffin with their tea or coffee? But those store bought muffins not only don’t fit into a keto, ketogenic, low carb or banting lifestyle, they are absolute killers! They look all innocent and one can be fooled into thinking, “It’s just a muffin, it can’t be that bad?” But those muffins are LOADED with sugar (find one with nutritional information on, you will be shocked)! But never fear, the Keto King is here. These low carb blueberry muffins cannot get any easier to make. Seriously, they are almost fool proof, look and taste just like muffins and will satisfy that craving for a disastrous store bought muffin.
As will all of my recipes, this doesn’t take long at all, fits perfectly into a low carb, keto, ketogenic, or banting lifestyle and will be something the whole family will enjoy. Now you have something which fits into your lifestyle which you can offer friends when having tea or coffee at home. Plus, you get to brag about your skills with your homemade low carb muffins.
This keto recipe is as simple as mixing the wet ingredients in a bowl, mixing the dry ingredients in a bowl, mixing the wet and dry together and popping it in the oven in a muffin tray! Yes, that is it and you end up with delicious keto muffins (well keto blueberry muffins to be precise). The blueberries give this low carb recipe such a great touch as you get to taste the blueberries in every bite as they bake right into these low carb blueberry muffins. They are made with coconut flour so you have grain free muffins and gluten free muffins for those avoiding grain and gluten. The coconut flour is of course low carb so it make a perfect base for these coconut flour muffins.
These keto blueberry muffins can also be tweaked to your personal taste preference by adding in your own choice of sweetener and adding in less or more of the sweetener.

Ingredients:
1/2 cup Coconut Flour (55g / 1.94oz)
1 teaspoon Baking Powder (5g / 0.18oz)
1/4 teaspoon Salt (1.25g / 0.04oz)
1/8 cup or 2 Tablespoons Stevia (3g / 0.11oz)
1/8 cup or 2 Tablespoons Xylitol (24g / 0.85oz)
1/4 cup of Butter (melted) (1/2 stick / 58g / 2oz)
6 Large Eggs
1/2 teaspoon Vanilla Essence / Extract (2.5g / 0.09oz)
½ cup Blueberries (75g / 2.6oz)
Add wet ingredients together, add dry ingredients together. Mix wet and dry together. Add to a 12 hole muffin tray (less holes for bigger muffins) and bake for 20 – 30mins.
Macros per muffin (if you make 12):
Calories: 97
Fat: 7g
Net Carbs: 2g (4g carbs - 2g fibre)
Protein: 4g
Macros for entire batch:
Calories: 1165
Fat: 84g
Net Carbs: 25g (47g carbs - 22g fibre)
Protein: 45g
