We're using up leftovers today! Cold rice and kimchi make for an awesome kimchi fried rice! We're topping it with a runny sunny side up egg and some fried Spam on the side, too! This is super good comfort food! Let's get to it!
Kimchi (your favorite kind)
Cold leftover rice
Garlic (the more cloves the merrier)
1 Egg
1/2 Tbsp water
Spam
Seaweed strips
Start by beating the egg and then add in about 1/2 Tbsp of water to it. Once incorporated, start frying a thin layer of your egg mixture into a hot pan (low flame) with oil. Just pour in enough to cover the surface and let it cook slowly. Once the edges have started crisping up, toss the omelette onto a chopping board. Roll it up and start slicing like you would noodles (the thickness is up to you!).
Mince the garlic and saute it in some oil (feel free to use olive oil if you want). As soon as it starts getting fragrant, go and add in your kimchi. Simmer it for about 2-3 minutes until the vegetables start to develop some more color. Add in your rice afterwards, then soften everything up with some of the kimchi's juices and about 1/4 cup of water.
Continue cooking on medium-high until the grains of rice have softened again and are coated in a nice orange-red color. Add in some of your sliced egg, and then you can optionally add in about 2 Tsp of sesame oil, some gochujang, and cracked black pepper. They're optional but all highly recommended :) mix well.
For the Spam.. just cook it how you normally would :) I always like to panfry thick slices.
Serve the fried rice with the Spam on the side, the remainder of your egg slices, and then top everything off with seaweed strips and sesame seeds.
