Hello Everyone, Here I have a very simple recipe of Khichu also known as "papdi no lot" and its basically a rice cake (kind of) steamed to perfection. This is a preliminary process of making a khichiya papad a.k.a papdi which can be stored for a year and you can eat it by roasting it or frying it. After steaming it, the cooked dough is folded many times and then roll it to make a tortilla (papdi/khichiya papad), and then it is sun dried to perfection. But since its simplicity, this khichu - steamed rice dough - it got so popular in western part of India- in Gujarat that it is now served during fun fairs and festivals especially in Navaratri. Also acquired a permanent place in some fast food menus at the stalls. In winter months it taste best when it served warm with drizzled oil on top and green chutney. So delicious! I made this so many times and now it is so simple to put it together in no time an decided to share it with you all. Have fun and Happy eating! Enjoy!
