Hello friends!!! Today I have prepared wild lemon pickle, It's different from citron (Narthangai),It tastes sour, we can make pickle using this wild lemon and have it as a side dish for curd rice. preparation time: 30 minutes cooking time: 20 minutes yield- one big container (we can store it for one week) Ingredients: wild lemon (Kadarangai) oil as required Asafoetida- half an inch or 1/2 tsp if you use powder fenugreek seeds- 1 tsp mustard seeds- 1 tsp as well as for tempering 1/2 tsp garlic- 9 cloves ( skin removed) jaggery according to your taste red Chilli powder- 2 tbsp turmeric powder- 1/2 tsp required salt preparation: firstly you have to rinse the wild lemon well and pat it dry with a towel and leave it for 30 minutes to remove the excess moisture. 2.After 30 minutes we will chop the wild lemon as a medium size then remove all the seeds before chopping them into a small pieces. 3.chop the medium sized lemon into a small pieces. 4.then get them in a air tight container and add the required salt and give it a good stir &Close it &leave it to sit for five days,( Note - Every day morning open the box and give it a good stir and Close it . Do it all day morning till 5th day ) 5) after five days open and see the skin of the wild lemon has softened well. so we can make pickle. 6. first dry roast the fenugreek seeds and mustard seeds over low flame for a few seconds and let it cool for a while and grind it into a fine powder or coarsely. keep it aside 7.in a pan heat the gingelly oil as it tastes good if we use gingelly oil, that's why. add 2 tbsp or as required 8. add the mustard seeds and allow it to crack. add the Chopped pieces and keep on stirring till the water evaporates over medium flame. add the garlic cloves,red Chilli powder , turmeric powder and ground powder & give it a good stir, keep on stirring till all the flavours are absorbed. when it's done add the jaggery and allow it to melt by keep on stirring. when it's melted fully and combined well lower the flame to simmer and just cook till oil leaves sides of the pan. that's all yummy pickle is ready!!
