Looking for a tasty one-pot pasta meal for an easy weeknight supper? Here it is! When we say 'One-Pot' we mean one pot... everything - even the pasta - is cooked in just the one pan.
Ingredients:
4 slices thick-sliced bacon, chopped
2 cloves garlic, minced
8 oz. (225g) penne
3 cups (750 mL) chicken broth
½ tsp (2 mL) salt
¼ tsp (1 mL) freshly ground black pepper
1 head broccoli chopped
1 cup (250 mL) frozen peas
¼ cup (60 mL) whipping cream (35%)
¼ cup (60 mL) grated Parmesan cheese (or Pecorino, or any hard Italian cheese you like)
Method:
In a deep skillet fry the bacon until crisp.
Add in garlic; cook stirring for 30 seconds or so.
Then add in pasta, broth, salt, and pepper.
Bring to a boil; reduce heat, cover and simmer for 12 to 15 minutes or until pasta is tender.
Give it a stir once or twice during this time.
Stir in broccoli, peas, whipping cream, and Parmesan cheese.
Cook stirring about 2 minutes more or until heated through.
Makes: 4 servings
Start to Finish: 35 mins
