Iraqi dolma is known to be the best dolma in the dolma world. I have made dolma for years and each time I improvise and this is the best over and over. you can use any vegetables but in this video I am using aubergine, courgettes, onions and vine leaves. you can also use chard, peppers, tomatoes. everyone has their own way of making it, you can add meat to the bottom of the pan as well as broad beans. in this video I have made dolma using ingredients I had available on the day. Kurds also use sumaq to make the citrus water but I did not have any so I am using citric acid. making dolma is not easy but once you get the hang of it, it becomes second nature. in this video I have tried to show you step by step how to make it. any questions? comment below and I am happy to answer
