Check out my blog for more info on cooking Egyptian food at: dynasegyptiancooking.blogspot.com.au Recipe Serves: 4 Meat balls: ½ kg / 500g minced beef 1 medium onion grated or finely chopped 1 garlic clove crushed ¼ teaspoon salt 1/8 teaspoon ground pepper ½ teaspoon mixed spice powder or cinnamon ½ teaspoons cumin powder 1 tablespoon chopped fresh continental or Italian parsley 2 tablespoons rice flour (ground rice) Ghee or oil for frying Tomato sauce: 1 tablespoon ghee or butter 1 medium onion finely chopped 2 cloves garlic, crushed 1 ½ cups or tomato puree or simple pasta sauce 1 cup water 1/8 teaspoon ground pepper ¼ teaspoon salt, or to taste ½ teaspoon mixed spice powder ½ teaspoon ground allspice 1 tablespoon of chopped fresh basil or ½ teaspoon dried basil Optional: chilli in the meatballs and peas, corn, beans, carrot diced and cooked with tomato sauce. Place all the ingredients for the meat balls in a bowl. Using your hands combine together really well. Take a tablespoon of the mixture and roll into a ball about the size of a walnut. Heat butter in a pan and fry meatballs until browned all over. Alternatively, heat oil in a deep fryer and fry meatballs in batches until well browned. Remove meatballs and drain on paper towel. To make the tomato sauce: Melt butter in a large saucepan, or pressure cooker, and brown onion and garlic. Add tomato puree and 1 cup water. Add mace and pepper and bring to the boil. Add the meatballs (meatballs should be covered, if not add more water) Cover and cook on high heat for 10 minutes then medium heat for 15 - 20 minutes or until meatballs are tender. Remove from heat. If the tomato sauce has not reduced or is too watery, add the rice flour to thicken before serving. Serve over rice.
