She’s the First is a non-profit organization that provides scholarships for girls in low-income countries so that those girls can be the first in their family to graduate high school. Every year, they hold an annual #BakeAChange campaign where they encourage people to hold bake sales to fundraise for girls’ education – and this year, I’m their #BakeAChange ambassador!! :D Today, I’ll show you how to create a fun and easy Fall Bake Sale table perfect if you want to #BakeAChange and fundraise for She’s the First!

Pumpkin Roll Cake Recipe
Ingredients
¾ cup flour
½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon
½ tsp cloves
¼ tsp salt
3 eggs (room temperature)
1 cup sugar
2/3 cup pumpkin puree (not pumpkin pie filling)
Candy melts in white, brown, and pink for ghosts
Candy pumpkins for decoration
Directions
1. Preheat oven to 350F. Grease a 15” x 10” jelly roll pan and line with parchment paper. Grease parchment paper.
2. Whisk together flour, baking powder, baking soda, cinnamon, cloves, and salt. Set aside.
3. In a separate bowl, beat eggs and sugar until thick and pale in color – about 6 minutes. Mix in pumpkin puree, then fold in dry ingredients. Pour into prepared pan and bake for 13-15 minutes.
4. Immediately after cake comes out of oven, flip out onto parchment paper lined cooling rack. Remove parchment paper from back of cake, then cover with a new sheet of parchment to prevent cake from drying out. Let cool completely.
5. Frost cooled cake with cream cheese frosting and gently roll. Decorate with buttercream, ghosts, and candy pumpkins.
Cream Cheese Frosting Recipe
Ingredients
8 oz. softened cream cheese
6 T softened butter
1 cup powdered sugar
1 tsp vanilla extract
Directions
1. Mix together cream cheese and butter until smooth. Mix in powdered sugar and vanilla extract.
Buttercream Frosting Recipe (psst…you can also sub store-bought frosting for the bit of frosting on top or double the cream cheese frosting recipe)
Ingredients
1 cup (2 sticks) butter
3 cups powdered sugar
3-4 T milk
1 tsp vanilla extract
Black gel food color
Directions
1. Mix together all ingredients until smooth.
