Yabbies are one of the nicest eating foods in the world, and are a true luxury food item. Here in Australia they are in plentiful supply, however they take time to catch, cook and shell which is why they are such a luxury item. I have been yabbying most of my life. I love it, and always have. I have caught yabbies in opera house nets, meat and string, drag nets, by hand, looking under logs and rocks etc... The scientific name for the yabbies we get here in Victoria is Cherax Destructor. I am not sure where the name originated, but sure destructor must have something to do with the powerful nippers on each yabby. Cooking yabbies is simple. Even cooking them perfectly requires little cooking skills which is good for me because I can not cook to save my own life! Place the yabby into the boiling water and it will soon go red. Then let the yabby boil for around 10 minutes and bingo...yabby is cooked.
