JUNE 2017 UPDATE: These meals were all made in a day so they are smaller than actual meals since I didn't want the food to spoil or eat all of them together in a day. Please multiply the recipes as needed to meet your usual daily intakes. Even adding 1-2 cups of brown rice or 1-2 servings of fruit will help in making you feel healthier and more full. These are just some ideas and inspiration for your future meals.

Lunches can be a challenge. Lunches are a challenge in my opinion when you don't have access to a microwave or if you have to keep something warm or cold throughout the long days. However, these meals you don't necessarily have to keep warm or cold and they are super nutritious, colourful, and fun. :)
