2 Whole chickens 2-3 lbs each
4 Sprigs of thyme
1 Head of garlic
1 Lemon

1 Tablespoon paprika

Kosher salt & black pepper to taste
SWEET POTATOES
3 Lbs of sweet potatoes
2 Sprigs of thyme
Kosher salt & black pepper to taste
1 Tablespoon of olive oil
BROWN RICE AND BLACK BEANS
4 Cups of jasmine brown rice
7 Cups of water or veg stock
1/4 cup coconut milk
½ of a red onion
1 Can black beans drained
2 Sprigs of thyme
1 Tablespoon of olive oil
1 Scotch bonnet pepper
Kosher salt and black pepper to taste
