Easy and delicious couscous recipe

A quick and simple side dish. Serve with meat or chicken. Or have it on its own as a light lunch/ dinner.
Serves 4-6
Ingredients:
1 cup couscous
1/2 stock cube
300ml boiling water
1 teaspoon oil
1 red onion diced
salt to taste (I added 1 teaspoon)
150g/ 4 mushrooms chopped
1 tsp turmeric
