Detox Salad
Yield 4 servings
Ingredients
1/4 purple cabbage sliced thin
2 pomegranates, seeded
2 grapefruits, segmented
5 leaves purple kale, chopped
1/4 cup olive oil
3 tablespoons grapefruit juice
1/2 teaspoon dijon mustard
1 teaspoon dry turmeric
1 tablespoon grated fresh turmeric
1 tablespoon
Method:
1. Using a sharp knife, cut the top and bottom off the pomegranate. Score the outside peel into 4 sections being careful not to cut through the seeds, pull apart the quarters and gently released the seeds from the inside into a bowl of cold water.
2. Using a fine sieve skim off the pulp and skin that has risen to the top of the water and discard. Strain the seeds from the water and place on the serving plate.
3. On a serving plate add the grapefruit segments and kale to the pomegranate seeds and cabbage.
4. In a bowl combine the olive oil, dijon, honey, grapefruit juice and grated numeric whisk to combine.
5. Drizzle the dressing on top of the salad and enjoy!
