Vegan Style Kentucky Fried Chicken Recipe.
In this video I show you how I/how to made vegan fish. This is the first time I have made this recipe and I was quite surprised with how fishy it tasted. I have had soya fish but I’ve never had a gluten style fish. I am quite happy with how it turned out but next time I think I will try boiling the gluten dough without the cling film to see if this makes any difference to the texture.
Ingredients and Method.
For the gluten pieces (ie “Fish”):
The dry ingredients
2 cup of Vital Wheat Gluten
1 Cup of Engevita Powder
2 TBSP of Sea Kelp Powder
The wet ingredients
2 TBSP vegan Oyster sauce.
(I used Mama Sita Vegetarian Oyster sauce which is vegan as I checked out the ingredients)
Roughly 300 – 400mls of hot water.
Directions
Mix the dry ingredients together in a bowl and then mix the wet ingredients together in a jug. Pour the wet ingredients over the dry ingredients and mix together to form dough. You might need to add a little more vital wheat gluten flour or hot water as you go along to form dough. Once you have formed the dough, knead it for roughly 3-5 minutes and for a loaf shape. You will then need to wrpat the dough in cling film and tie knots at either end, but remember to allow space for the dough to swell in the stock. You do not have to do this last step, (I’m not a huge fan of doing this myslef) but it does help to keep the shape of the dough. Alternatively you could wrap the tough in a piece of muslin and tie the ends with sting.
Ingredients for the Fish Stock:
2 veggie stock cubes
1 TBSP of Sea Kelp.
Water…
Directions
Add the Gluten to the stock making sure the gluten is fully covered with water, and then allow simmer for 1 and ½ hours. You may also need to add more water as the gluten cooks and swells in the water.
Ingredients for the crispy batter:
2 cups of Plain All Purpose Flour
1 cup of Course Semolina
1/2 TBSP of Black Pepper
1 TSP Garlic Powder
2 TSP Onion Powder
2 TSP Celery Salt
2 TSP Tumeric
Directions
Mix these together
The Wet Ingredients:
1 and ½ cups of Soya Milk
The juice of one whole Lemon
Directions
Coat each piece in the dry mixture abd the the wet mixture and then repeat again. Once coated fry the glutens pieces in sunflower oil on a low heat until Golden. And that’s it. I really hope you enjoy this recipe as much as the meat-eating members of my family did!
