As for Nito, poise tanking is the easiest way to beat him (not counting pyromancy) but... I've been fast rolling for so long that I immediately start to fail as soon as I'm fat rolling, sometimes even mid-rolling. Playing PvP in Dark Souls tends to get you out of practice of PvE and vice versa, thanks to different timing on ripostes and all that.
