Shio koji is a traditional use of koji, the ancient mold that gives us soy sauce, miso, fermented bean paste, and sake. It is made by combining rice koji (cooked rice that has been inoculated with koji spores and then dried), salt, and water and letting the mixture ferment for about a week, during which time it develops a sweet, fruity, slightly funky aroma. Shio koji is primarily used as a marinade. Because it is rich in protease enzymes (which break down proteins) and amylase enzymes (which break down starches), it can transform many foods.

CRISPY PORK CUTLET RECIPE
(serves two, but it's easily scalable)
Bone-in Pork Chops, 2 each (about 8 oz. apiece)
Shio Koji, 1/4 cup
Kosher Salt, as needed to season the pork
Ground Black Pepper, as needed to season the pork
All-Purpose Flour, 1 Cup
Whole Eggs, 2 each
Panko Breadcrumbs, about 1 1/2 to 2 Cups
Canola Oil, enough to fill a fry pan by about an 1/8 inch
Lemon, 1 each cut in half
SUMMER TOMATO SALAD
(you'll have extra vinaigrette, save it for another meal)
Assorted Local Cherry Tomatoes
Kosher Salt, about 1/2 tsp.
Dijon Mustard, about 1 tsp.
Red Wine Vinegar, 2 tsp.
Garlic Powder, fat pinch
Honey, 1/2 tsp.
Extra Virgin Olive Oil, about 2 tbsp. (enough to create a thin emulsion)
Local Mixed Salad Greens
Shave Red Onion, as needed
Capers, as needed
Cracked Black Pepper, to taste
Shaved Parmesan Cheese, as needed
